Irish Soda Bread

One of my favorite things about St. Patrick’s Day is the Irish Soda Bread. I love having it during our traditional Irish dinner and then again in the morning with melted butter and a cup of tea. Usually the bread runs about $3.95 in stores and then $1 the day after St. Patty’s (what?!), so I always try to stock up afterward!!!

This year I decided to make the bread on my own. It was a lot easier than I thought it would be, so I have another one in the oven at this very moment. I wasn’t going to post this since it’s after St. Patrick’s Day already, but who says you’re only allowed to be Irish one day of the year.

Here is the yummy recipe I found:

3 Cups All-Purpose Four

1 Tbs Baking Powder

1/3 Cup Sugar

1 Tsp Baking Soda

1 Tsp Salt

½ Cup Baking Raisins

1 Egg, lightly beaten

2 Cups Buttermilk

¼ Cup butter, melted

Preheat your oven to 325 degrees.

In a large bowl whisk together the flour, baking powder, baking soda, sugar and salt. In a separate bowl, mix together the lightly beaten egg and buttermilk. Pour the wet mixture into the dry mixture’s bowl and combine all at once—The batter will be lumpy. Then add the melted butter and raisins and mix them in well. Pour into a greased 9x5 bread pan. Bake for 65-70 minutes.

When the bread is finished baking, use a toothpick and see if it comes out clean from the center of the loaf. If it’s still too wet, then you need to bake it for a few more minutes.

Tip: Bake this bread either the day before, or in the morning the day you will serve it.
